Gaspésien Breakfast muffin

Ingredients for: 8 portions

  • 6 eggs
  • 1 package (or 200 g) of cooked Gaspésien ham
  • Half an onion, chopped
  • Half a red bell pepper, chopped
  • Fresh parsley, chopped
  • Grated cheese (of your choice)
  • Salt and pepper to taste

Preparation

  1. Preheat the oven to 375°F.
  2. Cut three slices of ham into small pieces.
  3. In a large bowl, beat the eggs, then add the onion, bell pepper, chopped ham, parsley, and cheese. Season with salt and pepper to taste. Mix well.
  4. Spray 8 muffin cups with non-stick vegetable cooking spray.
  5. Place one slice of ham in each muffin cup, folding it to cover the bottom.
  6. Pour about ¼ cup of the mixture into each muffin cup.
  7. Bake for 20 to 25 minutes.
  8. Let rest for a few minutes and enjoy!
