Gaspésien Breakfast muffin

Ingredients for: 8 portions
- 6 eggs
- 1 package (or 200 g) of cooked Gaspésien ham
- Half an onion, chopped
- Half a red bell pepper, chopped
- Fresh parsley, chopped
- Grated cheese (of your choice)
- Salt and pepper to taste
Preparation
- Preheat the oven to 375°F.
- Cut three slices of ham into small pieces.
- In a large bowl, beat the eggs, then add the onion, bell pepper, chopped ham, parsley, and cheese. Season with salt and pepper to taste. Mix well.
- Spray 8 muffin cups with non-stick vegetable cooking spray.
- Place one slice of ham in each muffin cup, folding it to cover the bottom.
- Pour about ¼ cup of the mixture into each muffin cup.
- Bake for 20 to 25 minutes.
- Let rest for a few minutes and enjoy!
