Macaroni Salad

Ingredients
- 2 cups of macaronis
- 2 slices (1/2 inches thick) of Gaspésien toupie ham, diced
- 2 cups of cherry tomatos, halved
- 1 orange bell pepper, diced
- 3 green oignons, minced
- 1 cup of green peas
- 1 block of feta cheese, crumbled
- Chopped fresh chives (to taste)
- 4 tablespoons of olive oil
- Sauce : 2 tablespoons of mayonnaise, 1 teaspoon of dijon mustard, black pepper and hot pepper (to taste), thinned with water
Preparation
- Cook the macaroni in boiling salted water according to the package instructions until al dente. Drain and let the macaroni cool in a large salad bowl.
- Add the diced ham, tomatoes, bell pepper, green onions, green peas, feta cheese, and chopped fresh chives to the bowl.
- Pour the olive oil over the salad and mix to coat all the ingredients evenly.
- Prepare the dressing (in a jar with a lid): add the mayonnaise, Dijon mustard, pepper, chili, and water, then mix. Add it to the salad and stir again to evenly distribute the flavors.
- Refrigerate for at least one hour. Check the seasoning and adjust, if necessary, with salt and/or pepper to your taste.
