Pulled Pork

Ingredients
- 2 Gaspésien pork rolls
- 2 tablespoons of Dijon mustard
- 3 garlic cloves, puréed or minced
- 1 large onion
- 2 tablespoons of tomato paste
- 1 dark or strong beer (500 ml)
- 1 cup of BBQ sauce
- 2 tablespoons of honey
- Chili powder (optional)
- Pepper
Preparation
- The day before, desalinate the pork rolls. To do this, rinse them under water, place them in a dish, and cover with water. Refrigerate.
- The next day, drain them, make sure they are dry, then coat them with Dijon mustard and pepper. Finely slice the onion and place it with the pork rolls in an oven-safe pot.
- Mix the garlic, tomato paste, BBQ sauce, honey, chili powder, and beer, then pour this mixture into the pot.
- Cover and bake for 3 hours at 350°F (175°C).
- Remove the meat from the pot, shred it with two forks, and set it aside in a bowl.
- Collect the sauce, reduce it, and add it to the meat!
